ONCE UPON A TIME...

Our story begins almost 100 years ago, on a farm located in the rural region of Pernambuco, Brazil, home to the family of Flavio Assis. On this rural farm, blanketed with cows and sheep, Flavio first experienced the taste of home crafted coalho cheese.

 

After settling in Vancouver in 2016 and missing the flavours of home, Flavio began experimenting with ways to blend his childhood memories and family history with pure cheese using modern technology and Canadian hygienic standards to create something truly special: a Made-in-Canada coalho cheese.

 

With countless attempts and support from dedicated suppliers, Flavio finally arrived at his recipe: a coalho cheese made in Canada that perfectly captures the flavour of his childhood. In 2021, to share this flavour with the world, Wow Food was born - a 100% Canadian company, with a very Brazilian accent.

 

This dedication, history and flavour has come to life in Wow Food’s Coalho Cheese - Grilling Cheese. This authentic Brazilian northeastern curd cheese is produced entirely in British Columbia, Canada using fresh local ingredients.

 

In addition to its incomparable flavour and quality, Coalho Cheese is crafted entirely from the original recipe of the Assis family and blended with the highest standards of milk produced in British Columbia, Canada using only whole ingredients: fresh local milk, a pinch of salt, and vegetarian rennet (derived from the fermentation of purified Japanese mushroom Mucor miehei.)

 

Coalho Cheese can be consumed raw, fried, roasted or grilled, with numerous preparation possibilities. All from this natural, high protein cheese that can be consumed by vegetarians.
